Hayman’s Rest Gin In the same way that gin was aged in casks rather than bottles in London’s ornate gin palaces during the 19th century, ours is aged in Scotch whiskey casks for just three weeks. This brief contact with the wood lifts our botanical flavors and enhances the peppery flavour.
