Arak Maadi Wine is a superior spirit made with passion, artistry and respect for heritage. It caters to enthusiasts who appreciate the consistent flavor of the Levant. It is a true Palestinian splendor. Our grapes come from vineyards located west of Bethlehem and north of Hebron, in the villages of Beit Jala, Al-Khader, Sheikh Al-Arroub, Beit Ummar and Halhul. We source anise seeds from Raba, Jenin. The water we use to prepare arak is from the Ein al-Duik spring, just north of Jericho, and the clay amphorae we use for ripening are handmade in Hebron. Arak Maadi Distillery is made from ground, naturally fermented and hand-pressed Dabuki grapes. The resulting wine is then triple distilled in direct fire, where it is concentrated, purified, and infused with local anise seeds. It is then, as custom dictates, matured in clay amphorae for 12 months before bottling, at which point it is diluted to 53% alcohol with limestone-filtered Jordan Valley spring water.
